From time to time I have made homemade shortbread and every time I make it I say, next time I'm going to make it thicker, this time was no different, it was sweet and melt in your mouth, but I still wanted it thicker....next time
The best homemade shortbread I ever had the pleasure of sampling was my Scottish co-worker Jackie's shortbread. I used to work with Jackie and if we ever had a bake sale or something similar, Jackie would make her amazing Shortbread, this stuff was out of this world, so yummy and so perfect...
I have plans to ask Jackie for her recipe, so a second round of Shortbread recipes might happen if she is able to give me her secret recipe, fingers crossed everyone
This recipe I used today and have used in the past suggests rolling into a round and cutting into triangles, known as petticoat tails but I have these cute wooden shortbread molds, and I was excited to try them for the first time

These cute items have been on the top shelf of my pantry, my sister gave then to me a few years back as a Scottish gift, I love them and I have been waiting on an excuse to use them. That time has come
To make delicious Shortbread
You will need
100g/4oz Butter
50g/2oz Icing sugar (powdered sugar in USA)
150g/5oz plain flour
25g/1oz Cornflour (Cornstarch in USA)
1 tbs sugar to sprinkle
Makes 6 large petticoat tails

Cream the butter in a large mixing bowl
Add the sugar to the butter and beat until its light and creamy

Sift the flour and cornflour over the mixture and mix with a wooden spoon until well combined

Knead the mixture together to form a soft dough

Over a lightly floured surface, roll out the dough to a 7inch round shape

But continue to make petticoat tails otherwise
Put 7 inch round on a baking sheet carefully and pinch the edge
Cut into 6 petticoats or wedges
Chill in fridge for 1 hour
Set oven to 325F / 170C
Remove from fridge and bake for 30 minutes until shortbread is a pale golden colour
Remove from oven and re cut the wedges
Sprinkle with sugar while warm
Leave to cool on same baking tray for around 20 minutes
And there it is

Just to add, while making this Blog, I am now found constantly in the kitchen taking photos of food and ingredients and the likes

ReplyDeleteI really enjoy the taste and texture of shortbread, and making them with confectioners sugar and the cornstarch are two great ingredients for melt in your mouth cookies. Nice post andi thewednesdaybaker
ReplyDeleteMy mom ( from Motherwell ) made the best shortbread I've ever had. She used to roll it out into a square about 3/4" thick and cut them into roughly 1"x 3" fingers and then prick them about 4 or 5 times with a fork then she would bake them on a cookie sheet covered with a brown paper shopping bag cut to fit the sheet. Everything was mixed by hand, she told me to never use a mixer for some reason. They were an amazing blonde colored slice of heaven and you could smell them baking as soon as you got within 200 feet of the kitchen. Love your site BTW.
